2 medium zucchinis

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh basil leaves, chopped

2 cloves garlic, minced

1/4 teaspoon freshly ground black pepper

1/2 teaspoon red pepper flakes (optional for a kick)

1 cup marinara sauce (for serving)

Prepare the Zucchini:

    - Preheat your oven to 400°F (200°C).

      - Using a mandoline slicer or a sharp knife, cut the zucchinis lengthwise into thin strips, aiming for approximately 1/8-inch thick.

        - Lay the zucchini strips flat on a clean kitchen towel and sprinkle them lightly with salt. Allow them to rest for about 10-15 minutes; this will help draw out excess moisture and prevent sogginess.

          Make the Filling:

            - In a mixing bowl, blend together the ricotta cheese, grated Parmesan cheese, chopped basil, minced garlic, salt, black pepper, and red pepper flakes if desired. Stir the mixture until it is smooth and well combined, ensuring an even distribution of flavors.

              Assemble the Pinwheels:
