Ingredients

2 medium zucchinis, grated (approximately 2 cups)

1 teaspoon salt

1/2 cup all-purpose flour (or substitute with almond flour for a gluten-free option)

1/4 cup freshly grated Parmesan cheese

1 large egg

1/4 cup finely chopped green onions (scallions)

2 cloves garlic, finely minced

1/2 teaspoon freshly ground black pepper

1/2 teaspoon smoked paprika (optional, for an extra kick)

1/4 cup fresh parsley, chopped (or use dill for a unique twist)

Olive oil, for frying

Sour cream or Greek yogurt, for serving

Instructions

Prepare the Zucchini: Begin by grating the zucchinis with a box grater or food processor. Transfer the grated zucchini into a clean kitchen towel or cheesecloth, then sprinkle with salt. Allow it to sit for about 10 minutes to draw out excess moisture. After the time has passed, twist the towel or cloth to squeeze out as much water from the zucchini as you can.

Mix the Ingredients: In a large mixing bowl, combine the squeezed zucchini with the flour, grated Parmesan cheese, egg, chopped green onions, minced garlic, black pepper, smoked paprika (if desired), and chopped parsley. Mix everything thoroughly until well combined. The batter should be cohesive—if it appears too wet, gradually add a little more flour until it holds together properly.

Heat the Oil: Pour about 2 tablespoons of olive oil into a large skillet and heat it over medium heat. Ensure the oil is sufficient to coat the bottom of the skillet, which will help in evenly frying the fritters.

Form and Fry the Fritters: Once the oil is hot, scoop about 2 tablespoons of the zucchini mixture and shape it into a small patty. Gently place the patty into the skillet. Repeat this process, leaving enough space between each fritter to prevent overcrowding. Fry each fritter for approximately 3-4 minutes on one side until they are golden brown, then carefully flip and cook for another 3-4 minutes on the other side, getting them evenly crispy.

Drain and Serve: After frying, transfer the golden, crispy fritters to a plate lined with paper towels to absorb any excess oil. Continue frying the remaining zucchini mixture, adding more olive oil to the pan as needed to maintain a good frying surface.

Enjoy: Serve the fritters warm, with a generous dollop of sour cream or Greek yogurt on the side for dipping. These delightful zucchini fritters can be enjoyed as a snack, appetizer, or a savory side dish to elevate any meal!
