2 medium zucchinis, diced

300g (10.5 oz) pasta (penne or fusilli recommended)

250g (9 oz) crumbled feta cheese

1 cup cherry tomatoes, halved

1 cup spinach, roughly chopped

1 medium onion, finely diced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

1/2 cup grated mozzarella cheese (for topping)

1/4 cup fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C). This ensures it's hot and ready for baking.

    Cook the Pasta: In a large pot, bring salted water to a vigorous boil. Add the pasta of your choice and cook according to the package instructions until it reaches an al dente texture. Once done, drain the pasta and set it aside to cool slightly.

      Sauté Vegetables: Heat the olive oil in a large skillet over medium heat. Add the finely diced onion and sauté for about 3-4 minutes, or until it becomes translucent. Incorporate the minced garlic and continue cooking for an additional minute until fragrant.

        Add Zucchini and Spinach: Introduce the diced zucchinis to the skillet and sauté for approximately 5-6 minutes, or until they begin to soften. Next, add the roughly chopped spinach and cook until it just wilts. Season the mixture with dried oregano, basil, salt, and pepper to enhance the flavors.
