Ingredients

1 lb salmon fillets, skinless, cut into 1-inch cubes

1 large orange, zested and juiced

2 tablespoons fresh ginger, finely grated

2 tablespoons soy sauce

1 tablespoon honey or maple syrup

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon sesame oil

Salt and pepper, to taste

1 red bell pepper, cut into 1-inch pieces

1 medium zucchini, sliced into thick rounds

1 cup cherry tomatoes, halved

Fresh cilantro or sliced green onions, for garnish

Bamboo or metal skewers

Instructions

Marinate the Salmon: In a medium mixing bowl, combine the orange juice, orange zest, freshly grated ginger, soy sauce, honey (or maple syrup), olive oil, minced garlic, and sesame oil. Season the mixture with salt and pepper to taste. Add the salmon cubes into the marinade, ensuring they are thoroughly coated. Cover the bowl and refrigerate for at least 30 minutes, allowing the flavors to meld. For a more intense flavor, marinate for up to 2 hours.

Prepare the Vegetables: While the salmon is marinating, prepare the vegetables. Cut the red bell pepper into 1-inch pieces and slice the zucchini into thick rounds. Halve the cherry tomatoes if you prefer a more uniform bite size. Set the prepared vegetables aside.

Assemble the Skewers: If using bamboo skewers, soak them in water for 20-30 minutes to help prevent burning during grilling. After the marinating time is complete, carefully thread the salmon cubes and prepared vegetables onto the skewers, alternating between pieces of salmon and vegetables for a colorful presentation.

Grill the Skewers: Preheat your grill to medium-high heat. Lightly oil the grill grates with a paper towel dipped in a bit of oil to prevent sticking. Place the skewers on the grill and cook for 3-4 minutes on each side. The salmon should become opaque and flake easily with a fork, while the vegetables should exhibit a slight char and become tender.

Serve: Once grilled to perfection, remove the skewers from the grill. Garnish with fresh cilantro or sliced green onions for added flavor and color. Serve the skewers immediately, accompanied by extra orange wedges or your favorite dipping sauce for a delightful touch.
