1 lb (450g) fresh salmon fillet, skin removed and cut into 1-inch cubes

2 large oranges (both zest and juice)

2 tablespoons fresh ginger, finely minced

3 cloves garlic, finely minced

3 tablespoons soy sauce

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

1 teaspoon red pepper flakes (feel free to adjust based on your spice preference)

1 red bell pepper, cut into 1-inch cubes

1 green bell pepper, cut into 1-inch cubes

1 small red onion, cut into wedges

Fresh cilantro leaves for garnish

Skewers (either metal or wooden skewers soaked in water)

Instructions
 

Prepare the Marinade: In a medium-sized mixing bowl, zest both oranges and then juice them. Add the minced ginger, minced garlic, soy sauce, honey or maple syrup, sesame oil, and red pepper flakes. Whisk together until all ingredients are fully combined.

    Marinate the Salmon: Take the cube salmon and place it in a resealable plastic bag or shallow dish. Pour half of the marinade over the salmon cubes. Seal the bag or cover the dish tightly, ensuring each piece of salmon is well-coated. Refrigerate for 30 minutes to 1 hour to allow the flavors to meld.

      Prepare the Vegetables: While the salmon marinates, wash and chop the red and green bell peppers, as well as the red onion. In a separate bowl, drizzle the remaining marinade over the chopped vegetables and toss to ensure they are evenly coated. Let them marinate for about 20–30 minutes.

        Assemble the Skewers: Preheat your grill or grill pan to medium-high heat. Thread the marinated salmon cubes, alternating with the marinated bell peppers and onion wedges onto the skewers. This will not only add flavor but also create a vibrant and colorful dish.

          Grill the Skewers: Lightly grease the grill grates or grill pan to prevent sticking. Place the skewers on the grill and cook for approximately 8–10 minutes. Turn them occasionally until the salmon becomes opaque and flakes easily with a fork, while the vegetables are tender and slightly charred.
