1 medium red onion, sliced into thin wedges

1 medium zucchini, cut into half-moons

1 cup cherry tomatoes, halved

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon crushed red pepper flakes (optional for an extra kick)

Salt and black pepper to taste

Fresh parsley or basil, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C), ensuring it reaches the right temperature for even cooking.

    Prepare the Vegetables: In a spacious mixing bowl, combine the sliced bell peppers, red onion wedges, half-moon zucchini slices, halved cherry tomatoes, and minced garlic.
