Ingredients

1 cup cooked beets, peeled and chopped

1 cup canned chickpeas, drained and rinsed

2 tablespoons tahini

2 tablespoons olive oil

1 garlic clove, minced

1 tablespoon fresh lemon juice

Salt and black pepper, to taste

4 slices of your favorite bread (sourdough or whole grain recommended)

Fresh herbs (such as dill or parsley), for garnish

Sesame seeds, for garnish

Optional: sliced radishes or microgreens for topping

Instructions

Prepare the Beet Hummus: In a food processor, combine the chopped cooked beets, drained chickpeas, tahini, olive oil, minced garlic, lemon juice, salt, and black pepper. Blend the ingredients until they are smooth and creamy, pausing occasionally to scrape down the sides with a spatula. Taste and adjust the seasoning, adding more lemon juice for tanginess or salt for enhancement, as needed.

Toast the Bread: While the beet hummus is blending to perfection, toast the slices of bread until they are golden brown and crisp. You can achieve this using a toaster, or by placing them in an oven preheated to 375°F (190°C) for about 5-7 minutes, or on a skillet over medium heat, flipping halfway.

Assemble the Toasts: Once the bread is toasted, generously spread a thick layer of the vibrant beet hummus over each slice, ensuring each toast is fully covered and colorful.

Garnish: Elevate the presentation by topping the hummus with a sprinkle of fresh herbs, a scattering of sesame seeds, and if desired, adorn with thinly sliced radishes or a handful of microgreens for an extra burst of color and a crunchy texture.

Serve and Enjoy: Serve the toasts immediately for a delicious appetizer or a light meal. For an extra touch of richness, drizzle a little olive oil on top before serving.
