  • 4.0 medium bell peppers
  • 1.0 cup cooked quinoa
  • 1.0 cup black beans
  • 1.0 cup corn kernels
  • 1.0 cup diced tomatoes
  • 1.0 small red onion
  • 2.0 cloves garlic
  • 1.0 tsp cumin
  • 1.0 tsp paprika
  • 1.0 tsp chili powder
  • 1.0 to taste salt
  • 1.0 to taste pepper
  • 1.0 cup shredded cheese
  • 1.0 spray olive oil
  • 0.0 to taste fresh cilantro

Instructions
 

  • Prepare the Bell Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Lightly spray the outside of the peppers with olive oil and set aside.
  • Cook the Filling: In a large mixing bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, red onion, garlic, cumin, paprika, chili powder (if using), salt, and pepper. Mix well until all ingredients are thoroughly combined.
  • Stuff the Peppers: Take the quinoa mixture and fill each bell pepper generously, pressing down slightly to pack in the filling. Leave some space at the top, as the mixture may expand while cooking.
  • Add Cheese: Sprinkle a layer of shredded cheese on top of each stuffed pepper.
  • Air Fry the Peppers: Preheat your air fryer to 350. Place the stuffed peppers upright in the air fryer basket, ensuring they are not overcrowded. Cook for 12-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
