Veggie and Egg Breakfast Burrito Bites

4 large eggs

1/4 cup milk (dairy or non-dairy)

1/2 cup bell pepper, diced (any color)

1/2 cup zucchini, shredded

1/4 cup red onion, finely chopped

1/2 cup fresh spinach, chopped

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and black pepper, to taste

6 small flour tortillas (whole grain or gluten-free)

1/2 cup shredded cheese (cheddar or your favorite blend)

Olive oil or cooking spray, for greasing the pan

Optional toppings: salsa, avocado slices, and chopped cilantro

Instructions
 

Begin by preheating your oven to 375°F (190°C). Prepare a muffin tin by spraying it with cooking spray or applying a light coat of olive oil to prevent sticking.

    In a medium mixing bowl, crack the eggs and add the milk. Whisk vigorously until the mixture is smooth and fully combined. Incorporate the garlic powder, cumin, and season generously with salt and black pepper, mixing well.

      Heat a skillet over medium heat and drizzle in a splash of olive oil. Once hot, add the diced bell pepper, shredded zucchini, and finely chopped red onion. Sauté for 3-4 minutes, stirring occasionally, until the vegetables soften slightly. Add the chopped spinach and stir for an additional minute until it wilts. Remove the skillet from the heat.

        Fold the sautéed vegetable mixture into the bowl of egg and milk, stirring until all ingredients are evenly coated.

          Take the tortillas and cut them into strips approximately 1 inch wide. You should be able to cut about 4-5 strips from each tortilla.

            To form the tortilla cups, arrange the strips in each muffin tin cup, overlapping them slightly to ensure the bottom and sides are covered.

              Carefully spoon the vegetable and egg mixture into each tortilla cup, filling them about three-quarters full. Top each one with a sprinkle of shredded cheese for added flavor and richness.

                Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the egg is fully set and the cheese is bubbly and golden brown on top.

                  Once baked, remove the muffin tin from the oven and allow the burrito bites to cool for about 5 minutes. Gently run a knife along the edges to free them, then lift each bite out of the pan.
