  • 2.0 medium sweet potatoes, peeled and grated
  • 1.0 small onion, finely chopped
  • 2.0 cloves garlic, minced
  • 0.25 cup all-purpose flour
  • 1.0 large egg, beaten
  • 0.5 cup fresh basil leaves, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon smoked paprika
  • 3.0 tablespoons olive oil
  • 1.0 serving Greek yogurt or sour cream

Instructions
 

  • Prepare the Sweet Potatoes: After grating the sweet potatoes, place them in a clean kitchen towel and squeeze out excess moisture.
  • Mix the Ingredients: In a large mixing bowl, combine the grated sweet potatoes, chopped onion, minced garlic, flour, beaten egg, chopped basil, salt, black pepper, and smoked paprika (if using). Mix well until everything is evenly incorporated.
  • Shape the Rosti: Using your hands, take a portion of the mixture and shape it into a patty, about 0.5 inch thickness. Repeat until all mixture is formed into patties.
  • Heat the Oil: In a large skillet, heat the olive oil over medium heat.
  • Fry the Rosti: Carefully place the patties into the pan, frying for about 4-5 minutes on each side until golden brown and crispy.
  • Drain Excess Oil: Once cooked, transfer the sweet potato rosti to a plate lined with paper towels to absorb excess oil.
  • Serve: Serve warm with a dollop of Greek yogurt or sour cream, and garnish with extra basil leaves if desired.
