Turkey Bacon Breakfast Quesadillas

4 large flour tortillas

8 slices of turkey bacon

1 cup shredded cheddar cheese

1 cup scrambled eggs (about 4 large eggs)

½ cup diced bell peppers (a mix of red, yellow, and green for color)

¼ cup finely chopped red onion

1 tablespoon olive oil

½ teaspoon garlic powder

½ teaspoon paprika

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Salsa or hot sauce for serving

Cook the Turkey Bacon: Start by heating a large skillet over medium heat. Add the turkey bacon and cook it for approximately 6 to 8 minutes or until it reaches a crispy texture. Once done, remove it from the skillet and place it on paper towels to drain excess grease. Allow it to cool slightly before chopping it into bite-sized pieces.

    Sauté the Vegetables: In the same skillet (no need to clean it), add the olive oil. Heat it over medium heat and then add the diced bell peppers and chopped red onion. Sauté the mixture for about 3 to 4 minutes, until the vegetables are tender and fragrant. Season with garlic powder, paprika, salt, and pepper for added flavor. Remove the vegetable mix from the skillet and set aside.

      Scramble the Eggs: In a mixing bowl, whisk together the eggs, adding a pinch of salt and pepper. In the now-empty skillet, add a splash of olive oil if necessary and pour in the whisked eggs. Scramble them over medium heat until they are just set. Once done, stir in the chopped turkey bacon and sautéed vegetables, making sure everything is evenly combined. Remove from heat once mixed.

        Assemble the Quesadillas: Heat a clean skillet over medium heat to prepare for cooking the quesadillas. Take one tortilla and on one half, sprinkle a layer of shredded cheddar cheese. Next, add a generous portion of the egg, bacon, and vegetable mixture, then top with another layer of cheddar cheese. Fold the tortilla in half to enclose the filling.

          Cook the Quesadillas: Place the folded quesadilla into the preheated skillet. Cook it for about 3 to 4 minutes on each side or until the tortillas are golden brown and crispy, with the cheese fully melted. Continue this process with any remaining tortillas.

            Slice and Serve: Once cooked, remove the quesadilla from the skillet and allow it to cool for a minute. Slice it into wedges for easy serving. Garnish with fresh cilantro if desired, and serve warm alongside salsa or hot sauce for dipping.
