Ingredients

For the Tuna Skewers:

1 lb (450g) fresh sushi-grade tuna, cut into 1-inch cubes

2 tablespoons extra virgin olive oil

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon sesame oil

1 teaspoon garlic powder

1 teaspoon ground ginger

Salt and black pepper, to taste

Bamboo skewers (soaked in water for 30 minutes)

For the Mango Salsa:

1 ripe mango, diced into small cubes

1/2 red bell pepper, finely chopped

1/4 red onion, finely minced

1/2 jalapeño, finely chopped (seeds removed for milder flavor)

Juice of 1 fresh lime

2 tablespoons fresh cilantro, chopped

Salt, to taste

Instructions

Marinate the Tuna: In a medium-sized mixing bowl, whisk together the olive oil, soy sauce, honey, sesame oil, garlic powder, ground ginger, salt, and black pepper. Add the tuna cubes to the bowl, gently tossing to ensure all pieces are evenly coated with the marinade. Cover the bowl and refrigerate for at least 15 minutes to let the flavors infuse into the tuna.

Prepare the Mango Salsa: In another mixing bowl, combine the diced mango, chopped red bell pepper, minced red onion, finely chopped jalapeño, lime juice, and chopped cilantro. Season with a pinch of salt. Stir the mixture gently until everything is well incorporated, and let it sit at room temperature to allow the flavors to meld while you prepare the skewers.

Assemble the Skewers: Preheat your grill or grill pan over medium-high heat. Thread the marinated tuna cubes onto the soaked bamboo skewers, ensuring there is a little space between each piece for optimal grilling. This spacing helps achieve even cooking and perfect char.

Grill the Skewers: Carefully place the skewers on the preheated grill. Grill for about 2-3 minutes on each side, cooking until the tuna is rare to medium-rare, based on your preference. Be cautious not to overcook the tuna, as it will dry out quickly.

Serve: Once grilled to your liking, remove the skewers from the grill and let them rest for about a minute. Serve the warm tuna skewers along with a generous scoop of zesty mango salsa on the side for dipping.

Enjoy this delightful dish that brings a tropical twist with fresh flavors!
