1/2 cup grated Parmesan cheese (substitute nutritional yeast for a vegan variant)

8 oz pasta of your choice (such as spaghetti, penne, or gluten-free)

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente. Once cooked, reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

    Sauté the Aromatics: In a spacious skillet, heat the extra virgin olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes, or until the onion becomes translucent. Next, incorporate the minced garlic and optional red pepper flakes, cooking for an additional minute until the garlic is fragrant.

      Add the Tomato Medley: Stir in the diced tomatoes and halved cherry tomatoes, seasoning with salt and pepper. Allow the mixture to cook for approximately 5-7 minutes, enabling the tomatoes to soften and release their flavorful juices.
