2 medium ripe tomatoes, diced

1 medium ripe peach, diced (preferably yellow or white)

1/4 cup red onion, finely chopped

1/4 cup fresh basil leaves, sliced thinly

1 tablespoon balsamic vinegar

1 tablespoon extra virgin olive oil

Salt and freshly ground black pepper to taste

1 baguette or ciabatta loaf, sliced into 1/2-inch thick pieces

Optional: 1/2 teaspoon garlic powder or 1 clove of garlic, halved for rubbing

Prep the Topping: In a medium mixing bowl, combine the diced tomatoes, diced peach, finely chopped red onion, and thinly sliced basil leaves. Drizzle the mixture with balsamic vinegar and olive oil.     Toast the Bread: Preheat your oven broiler on high. Arrange the sliced baguette or ciabatta on a baking sheet in a single layer.
