Tomato Basil Couscous Salad

Ingredients
  

1 cup couscous

1 ½ cups vegetable broth or water

2 cups cherry tomatoes, halved

1 cup fresh basil leaves, chopped

1 small red onion, finely diced

1 cucumber, diced

1/4 cup extra-virgin olive oil

2 tablespoons fresh lemon juice

1 teaspoon garlic powder

Salt and black pepper, to taste

Optional: 1/2 cup feta cheese, crumbled

Instructions
 

Cook the Couscous:

    In a medium saucepan, bring 1 ½ cups of vegetable broth or water to a rolling boil. Once boiling, remove from heat, quickly stir in 1 cup of couscous, and cover the pot with a lid. Allow it to sit undisturbed for about 5 minutes, letting the couscous absorb all the liquid. After this time, use a fork to fluff the couscous and let it cool to room temperature.

      Prepare the Vegetables:

        While the couscous cools, rinse and prepare your vegetables. Cut the cherry tomatoes in half, dice the cucumber, and finely chop the red onion into bite-sized pieces. Transfer all the prepared vegetables to a large mixing bowl.

          Mix the Dressing:

            In a small mixing bowl, combine 1/4 cup extra-virgin olive oil, 2 tablespoons of freshly squeezed lemon juice, 1 teaspoon of garlic powder, and a pinch of salt and black pepper to taste. Whisk the mixture until well combined, ensuring the flavors meld together.

              Combine Ingredients:

                Once the couscous has cooled, add it to your bowl of chopped vegetables. Drizzle the freshly made dressing over the salad and gently toss everything together, taking care not to crush the halved tomatoes.

                  Add Fresh Basil:
