Ingredients

1 lb (450g) flank steak, thinly sliced against the grain

2 tablespoons vegetable oil

4 cloves garlic, minced

2-3 bird's eye chilies, finely chopped (adjust spiciness to your preference)

1 bell pepper, thinly sliced (choose any color for vibrant presentation)

1 cup sugar snap peas, trimmed

1 cup fresh Thai basil leaves, loosely packed

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon fish sauce

1 tablespoon brown sugar

Cooked jasmine rice (for serving)

Lime wedges (for garnish)

Instructions

Marinate the Beef: In a medium bowl, mix the sliced flank steak with 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, and 1 tablespoon of brown sugar. Ensure the beef is evenly coated. Cover and let it marinate for at least 15 minutes to enhance the flavors while prepping the other ingredients.

Prepare the Stir Fry Base: Heat a wok or large skillet over high heat until it’s very hot. Add 2 tablespoons of vegetable oil and wait until it’s shimmering. Add the minced garlic and chopped bird's eye chilies, stirring quickly for about 30 seconds or until the garlic is fragrant and golden, but not burnt.

Cook the Beef: Carefully add the marinated beef to the pan in a single layer. Allow it to sear for about 2 minutes without stirring to achieve a nice browning effect. After that, stir-fry for an additional 1-2 minutes until the beef is browned and cooked through. Use a slotted spoon to remove the beef from the skillet and set aside on a plate.

Vegetable Medley: In the same skillet, add the sliced bell pepper and sugar snap peas. Stir-fry for approximately 2-3 minutes, or until the vegetables are vibrant in color and tender-crisp, retaining a slight crunch.

Combine and Flavor: Return the cooked beef to the skillet along with the remaining 2 tablespoons of soy sauce, fish sauce, and the Thai basil leaves. Stir well to combine all the ingredients, cooking for another 1-2 minutes until the basil leaves are wilted and fragrant.

Serve: Immediately serve the delicious stir fry over bowls of warm cooked jasmine rice. Garnish with fresh lime wedges on the side for a citrusy finish.
