Tex-Mex Chicken & Black Bean Tortilla Stack

2 cups cooked chicken, shredded

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup salsa (your favorite kind)

1 cup shredded cheese (cheddar or a blend)

6 large flour tortillas

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

1/2 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Preheat the Oven: Set your oven temperature to 375°F (190°C) to prepare for baking.

    Prepare the Mixture: In a large mixing bowl, combine the shredded chicken, drained black beans, corn, salsa, chili powder, ground cumin, garlic powder, onion powder, salt, and black pepper. Stir everything together until the mixture is evenly combined and set aside.

      Layer the Stack: Take a 9x13 inch baking dish and spread a thin layer of the chicken and bean mixture evenly on the bottom. Place one flour tortilla over the mixture, ensuring it covers the bottom completely. On top of the tortilla, add another layer of the chicken and bean mixture and then sprinkle a generous amount of shredded cheese over it.
