2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 tablespoon cornstarch

For the Rice Bowls:

2 cups jasmine or long-grain rice

4 cups water or chicken broth

1 cup broccoli florets

1 cup snap peas

1 red bell pepper, thinly sliced

1/4 cup green onions, finely sliced

Sesame seeds, for garnish

Optional: pickled ginger and nori strips for serving

Marinate the Chicken: In a mixing bowl, whisk together the soy sauce, honey (or brown sugar), rice vinegar, sesame oil, minced garlic, minced ginger, and cornstarch until the mixture is smooth and well combined. Add the chicken thighs to the marinade, ensuring each piece is fully coated. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes, although marinating for 1-2 hours will enhance the flavor.

    Cook the Rice: Rinse the jasmine rice under cold running water until the water appears clear to remove excess starch. In a medium-sized pot, combine the rinsed rice and 4 cups of water (or chicken broth), adding a pinch of salt for flavor. Bring the mixture to a boil, then lower the heat to a gentle simmer, cover the pot, and cook for 15 minutes. Once cooked, remove the pot from heat and let it sit, covered, for an additional 10 minutes to allow the rice to steam. Finally, fluff the rice with a fork to separate the grains.

      Prepare the Vegetables: While the rice is cooking, steam the broccoli florets and snap peas in a steaming basket or place them in a microwave-safe bowl with a splash of water, covering it with a microwave-safe lid or plastic wrap.
