1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (use fresh, frozen, or canned)

1 small red onion, finely diced

2 cloves garlic, minced

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

1 cup diced tomatoes (fresh or canned)

1/2 cup shredded cheese (choose cheddar, Monterey Jack, or a vegan alternative)

1 ripe avocado, diced

Fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt, optional for serving

Lime wedges, for serving

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it's hot and ready for the sweet potatoes.

    Prepare the Sweet Potatoes: Thoroughly wash the sweet potatoes under cool water. Use a fork to prick each potato several times on all sides; this will allow steam to escape as they bake. Arrange the pricked sweet potatoes on a baking sheet lined with foil or parchment paper and bake them in the preheated oven for 45 minutes to 1 hour, or until they are tender and easily pierced with a fork.

      Cook the Filling: While the sweet potatoes are baking, heat a splash of oil in a large skillet over medium heat. Once the oil is hot, add the diced red onion and sauté it for about 3-4 minutes until it becomes fragrant and translucent. Then, add the minced garlic and cook for an additional minute until aromatic.

        Add the Meat: Incorporate the ground turkey or beef into the skillet, breaking it apart with a spatula as it cooks. Season the mixture with chili powder, ground cumin, smoked paprika, salt, and pepper. Cook for approximately 5-7 minutes, or until the meat is browned and fully cooked through.
