Ingredients

1 lb (450g) chicken breast, cut into 1-inch cubes

1/4 cup soy sauce

1/4 cup brown sugar

2 tablespoons honey

2 tablespoons rice vinegar

2 tablespoons mirin (optional, adds extra sweetness)

2 cloves garlic, minced

1 teaspoon freshly grated ginger

1 tablespoon sesame oil

1/2 teaspoon red pepper flakes (optional, for a touch of heat)

1 green onion, thinly sliced (for garnish)

Sesame seeds (for garnish)

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes before grilling)

Instructions

Marinate the Chicken: In a large mixing bowl, whisk together the soy sauce, brown sugar, honey, rice vinegar, mirin (if using), minced garlic, grated ginger, sesame oil, and red pepper flakes until the mixture is well combined and the sugar has dissolved. Add the chicken cubes into the marinade, making sure they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for a richer flavor infusion.

Prepare the Skewers: If using bamboo skewers, remember to soak them in water for at least 30 minutes before grilling to prevent burning. Meanwhile, preheat your grill or grill pan to medium-high heat.

Thread the Chicken: Take the marinated chicken pieces from the bowl, allowing any excess marinade to drip off. Carefully thread the chicken cubes onto the skewers, leaving small gaps between each piece to ensure even cooking.

Grill the Skewers: Place the skewers on the preheated grill. Grill each side for about 3-4 minutes, or until the chicken is fully cooked and has achieved a beautiful char (the internal temperature should reach 165°F or 74°C). During the last minute of grilling, brush the skewers with the leftover marinade to create an even stickier glaze.

Garnish and Serve: Once grilled, carefully remove the skewers from the heat and allow them to rest for a couple of minutes. Before serving, sprinkle the freshly sliced green onions and sesame seeds on top for an added burst of flavor and visual appeal.

Enjoy: Serve the skewers immediately alongside steamed rice or a vibrant fresh salad to create a delightful meal. Relish the sweet and sticky explosion of flavors!
