Ingredients

1 lb (450 g) chicken breast, diced into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch cubes

1 red bell pepper, cut into 1-inch squares

1 yellow bell pepper, cut into 1-inch squares

1 medium red onion, cut into quarters and separated

1/4 cup soy sauce

1/4 cup honey

2 tablespoons sriracha (adjust to your spice preference)

2 tablespoons rice vinegar

2 cloves garlic, minced

1 teaspoon ground ginger

1 tablespoon olive oil

Salt and pepper, to taste

Skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions

Marinate the Chicken:

In a large mixing bowl, whisk together the soy sauce, honey, sriracha, rice vinegar, minced garlic, ground ginger, olive oil, and a pinch of salt and pepper. Add the diced chicken to the marinade, ensuring each piece is thoroughly coated. Cover the bowl and refrigerate for at least 1 hour, or preferably up to overnight to allow the flavors to develop more deeply.

      Prepare the Vegetables:

While the chicken is marinating, wash and chop the vegetables. Cut the fresh pineapple, red bell pepper, yellow bell pepper, and red onion into similarly sized bite-sized pieces. This will ensure even cooking and a pleasant texture when grilled.

          Assemble the Kabobs:

Preheat your grill or a grill pan over medium-high heat until it’s hot and ready for cooking. Retrieve the soaked skewers and carefully thread the marinated chicken, pineapple pieces, bell pepper squares, and red onion quarters onto each skewer. Alternate the ingredients for a visually appealing presentation, making sure to pack them snugly but without crowding.

              Grill the Kabobs:

Once the grill is heated, gently place the assembled kabobs on the grill grates. Cook them for approximately 10-15 minutes, turning them occasionally to achieve even grilling and nice char marks. Use a meat thermometer to check that the internal temperature of the chicken reaches 165°F (74°C) for safe consumption.

                  Serve and Enjoy:

Once cooked, remove the kabobs from the grill and let them rest on a plate for a couple of minutes. Serve the kabobs warm, garnished with freshly chopped cilantro or sliced green onions, if desired. Pair with your favorite dipping sauce, such as a sweet chili sauce or a tangy yogurt dip, for a delightful flavor combination.
