2 medium zucchinis, finely diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 ripe avocado, diced

1/3 cup feta cheese, crumbled

Juice of 2 limes

3 tablespoons extra virgin olive oil

1 teaspoon honey (optional for sweetness)

Once cooked, allow to cool slightly before cutting the kernels off the cob. If you prefer canned or frozen corn, drain it well and heat it briefly before letting it cool.

    Dice the Zucchini: Rinse the zucchinis thoroughly under cool water and dry them with a towel. Cut off the ends and dice the zucchinis into small, bite-sized pieces for easy eating.
