2 cups fresh sweet corn (or 1 can of sweet corn, drained)

2 cups cherry tomatoes, halved

1 ripe avocado, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (optional for added heat)

Juice of 2 limes (about 1/4 cup)

3 tablespoons olive oil

1 teaspoon honey or agave syrup

Salt and freshly ground black pepper to taste
