Sweet Corn & Cheddar Quiche

1 pre-made pie crust (store-bought or homemade)

1 cup fresh or frozen sweet corn (if frozen, thaw before use)

1 cup sharp cheddar cheese, grated

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/4 teaspoon smoked paprika

1/4 teaspoon garlic powder

1/2 cup green onions, finely sliced (plus more for garnish)

1/2 teaspoon fresh thyme leaves (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) for optimal baking.

    Prepare the Pie Crust: Carefully place the pie crust into a 9-inch pie dish. Use a fork to prick small holes in the bottom of the crust to avoid bubbling during baking. Pre-bake the crust in the oven for 10 minutes, then remove it and allow it to cool slightly.

      Mix Eggs and Dairy: In a large mixing bowl, use a whisk to combine the eggs, whole milk, heavy cream, salt, black pepper, smoked paprika, and garlic powder. Whisk until the mixture is smooth and fully blended.

        Add Corn and Cheese: Gently fold in the sweet corn, grated cheddar cheese, sliced green onions, and fresh thyme (if you're using it). Make sure all ingredients are evenly mixed throughout the egg mixture.

          Assemble the Quiche: Pour the prepared egg and cheese mixture into the pre-baked pie crust. Use a spatula to ensure the corn and cheese are evenly distributed in the filling.
