1 cup Medjool dates, pitted

1 cup nuts (such as almonds, walnuts, or cashews), lightly toasted

1/4 cup unsweetened cocoa powder

1/4 cup dark chocolate chips (minimum 70% cocoa)

2 tablespoons coconut oil

1 teaspoon pure vanilla extract

Pinch of sea salt

Optional toppings: shredded coconut, crushed nuts, or additional cocoa powder for rolling

Prepare the Dates: If your Medjool dates are firm, soak them in warm water for about 10 minutes to soften them. After soaking, drain the water and gently pat the dates dry with a paper towel.

    Blend the Mixture: In a food processor, add the pitted dates along with the lightly toasted nuts. Pulse the mixture until the nuts are finely chopped and the dates start clumping together, resembling a sticky dough.

      Add Flavors: Incorporate the cocoa powder, dark chocolate chips, coconut oil, vanilla extract, and a pinch of sea salt into the food processor. Blend everything together until smooth and sticky. This process might take a few minutes; feel free to pause occasionally to scrape down the sides of the bowl to ensure even blending.

        Chill the Mixture: Once smooth, transfer the truffle mixture to a clean bowl. Cover it with plastic wrap or a lid and refrigerate for approximately 30 minutes. Chilling helps the mixture firm up, making it easier to shape into truffles.

          Form the Truffles: After chilling, use a tablespoon to scoop out portions of the mixture. Roll each portion into a bite-sized ball between your palms. If the mixture feels too sticky, dampen your hands slightly with water to prevent sticking.
