Ingredients

2 large boneless, skinless chicken breasts

1 cup sweet chili sauce

1 tablespoon soy sauce

1 tablespoon fresh lime juice

1 teaspoon minced garlic

1 teaspoon freshly grated ginger

1/2 teaspoon black pepper

1 cup bell peppers (choose a mix of red, yellow, and green), thinly sliced

1 cup carrots, julienned

1/2 cup fresh cilantro, chopped

8-10 large lettuce leaves (e.g., romaine or butter lettuce)

Sesame seeds for garnish (optional)

Instructions

Marinate the Chicken: In a medium bowl, combine the sweet chili sauce, soy sauce, lime juice, minced garlic, grated ginger, and black pepper. Mix well. Place the chicken breasts into a resealable zip-top bag or a shallow glass dish, then pour the marinade over the chicken. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 30 minutes, allowing flavors to meld, or up to 2 hours for a more robust flavor.

Prepare the Grill: Preheat your grill to medium-high heat. If using a grill pan on the stovetop, warm it over medium heat and lightly coat with cooking spray or a drizzle of cooking oil to prevent sticking.

Grill the Chicken: Remove the chicken breasts from the marinade (make sure to set aside the remaining marinade) and place them on the hot grill. Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and juices run clear.

Glaze with Marinade: During the last few minutes of grilling, brush the reserved marinade over the chicken to enhance its flavor. After grilling, transfer the chicken to a plate and let it rest for 5 minutes. This allows the juices to redistribute for a juicier bite.

Slice the Chicken: Once the chicken has rested, slice it into thin strips for easy assembly.

Assemble the Rolls: Take a large lettuce leaf and lay it flat. Add a few strips of grilled chicken, a handful of bell pepper slices, a small amount of julienned carrots, and a sprinkle of chopped cilantro to the center of the leaf.

Garnish: If you like a little extra crunch, sprinkle some sesame seeds on top of the filling for added flavor and texture.

Roll and Serve: Carefully fold the lettuce over the fillings like a wrap, securing it with a toothpick if desired to keep everything in place. Serve immediately with extra sweet chili sauce on the side for dipping.
