1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 tablespoon vegetable oil

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 medium zucchini, sliced into half-moons

2 cups broccoli florets

3 cloves garlic, minced

1 tablespoon fresh ginger, finely grated

1/4 cup sweet chili sauce

2 tablespoons soy sauce (preferably low sodium)

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening sauce)

2 green onions, thinly sliced (for garnish)

Sesame seeds (for garnish)

Cooked jasmine rice or noodles (for serving)

Instructions
 

Prep the Chicken: In a mixing bowl, combine the bite-sized chicken pieces with 1 tablespoon of soy sauce and 1 teaspoon of cornstarch. Toss everything together until the chicken is evenly coated. Allow it to marinate for about 10 minutes while you prepare the vegetables.

    Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once the oil is hot, add the marinated chicken and stir-fry for 5-7 minutes, or until the chicken is golden brown and fully cooked. Remove the chicken from the pan and set it aside on a plate.
