4 salmon fillets (approximately 6 ounces each)

1/4 cup honey

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

Salt and pepper, to taste

1 tablespoon sesame oil (for cooking)

For the Rice:

1 cup jasmine rice (or any rice of your choice)

2 cups water or vegetable broth

Pinch of salt

For the Bowls:

2 cups steamed broccoli florets

1 cup shredded carrots

1/2 cup shelled edamame

1 ripe avocado, sliced

2 tablespoons chopped green onions

Sesame seeds, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Salmon:

    - In a medium mixing bowl, whisk together honey, soy sauce, sriracha, rice vinegar, minced garlic, grated ginger, salt, and pepper until well combined. Place the salmon fillets in a shallow dish and pour the marinade evenly over the fillets. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

      Cook the Rice:

        - Begin by rinsing the jasmine rice under cold water until the water runs clear to remove excess starch. In a medium saucepan, combine the rinsed rice, 2 cups of water (or vegetable broth), and a pinch of salt. Bring to a vigorous boil, then lower the heat to a simmer.
