Ingredients

1 cup couscous

2 cups chicken broth (or vegetable broth for a vegetarian option)

1 lb boneless, skinless chicken breast

1/2 cup sun-dried tomatoes, chopped (preferably packed in oil for enhanced flavor)

1 cup fresh spinach leaves

1/2 cup feta cheese, crumbled

1/4 cup pine nuts, toasted

3 cloves garlic, minced

1 medium onion, diced

2 tablespoons olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for a spicy kick)

Salt and pepper to taste

Fresh basil or parsley, for garnish

Instructions

Cook the Couscous: In a medium saucepan, bring 2 cups of chicken broth to a vigorous boil. Once boiling, remove the pot from heat, add the couscous, cover it tightly with a lid, and allow it to sit undisturbed for about 5 minutes, or until all the liquid is absorbed. Afterward, fluff the couscous gently with a fork and set it aside.

Prepare the Chicken: While the couscous is resting, season both sides of the chicken breasts generously with salt, pepper, dried oregano, and red pepper flakes (if using).

Sear the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken breasts and cook for about 5-7 minutes on each side or until they are cooked through and have a lovely golden-brown crust. Remove the chicken from the skillet, allow it to rest for a few minutes, and then slice it into bite-sized pieces.

Sauté the Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté for approximately 3-4 minutes, stirring occasionally, until the onion is translucent and fragrant.

Combine Ingredients: Add the chopped sun-dried tomatoes and fresh spinach to the skillet. Cook for an additional 2 minutes, stirring, until the spinach has wilted.

Mix It All Together: Stir in the fluffed couscous, sliced chicken, and toasted pine nuts to the skillet. Gently toss everything together until combined. Taste and adjust seasoning with additional salt and pepper as desired.

Serve: Transfer the succulent couscous mixture to a large serving platter. Sprinkle crumbled feta cheese generously over the top, and finish with a vibrant garnish of fresh basil or parsley for added color.

Enjoy: Serve warm as a delightful main course or a hearty side dish that’s sure to impress!
