4 cups fresh sweet corn kernels (approximately 6-8 ears of corn)

1 medium onion, finely diced

2 cloves garlic, minced

2 medium potatoes, peeled and diced into small cubes

1 red bell pepper, diced

4 cups vegetable broth

1 cup coconut milk

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

Salt and freshly ground black pepper to taste

1/4 cup fresh basil, chopped (for garnish)

1 tablespoon freshly squeezed lime juice

Prepare the Corn: If using fresh corn, start by husking the ears. With a sharp knife, cut the kernels off the cobs and set them aside in a bowl.

    Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the finely diced onion along with the diced red bell pepper. Sauté the vegetables for about 5 minutes, stirring occasionally, until they begin to soften and the onion becomes translucent. Add the minced garlic and continue to sauté for an additional minute until fragrant.

      Add Potatoes and Spices: Next, incorporate the diced potatoes, smoked paprika, ground cumin, and a generous pinch of salt and pepper into the pot. Stir well and cook for 2 more minutes, allowing the spices to become aromatic and coat the potatoes.

        Pour in the Broth: Carefully add the vegetable broth to the pot. Increase the heat to bring the mixture to a gentle simmer. Once simmering, cover the pot and let it cook for about 15 minutes, or until the potatoes are fork-tender.

          Blend the Chowder: After the potatoes are cooked through, add the fresh corn kernels to the pot. Using an immersion blender, blend the chowder until it's creamy and smooth, while still leaving some chunks for added texture. If you don’t have an immersion blender, carefully ladle the mixture in batches into a countertop blender and blend until smooth.

            Add Coconut Milk: Stir in the coconut milk and fresh lime juice, allowing the chowder to warm through for an additional 5 minutes. Taste and adjust seasoning if necessary, adding more salt and pepper to your preference.
