Ingredients

15 large cremini or button mushrooms

1 cup cream cheese, softened to room temperature

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1/3 cup sundried tomatoes, finely chopped (preferably oil-packed for enhanced flavor)

2 cloves garlic, minced

1/4 cup fresh basil, chopped (or 1 tablespoon dried basil)

1/4 teaspoon red pepper flakes (optional, for a hint of heat)

Salt and pepper to taste

1 tablespoon olive oil

1/4 cup breadcrumbs (optional, for an added crunch)

Fresh parsley, finely chopped, for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This will ensure the mushrooms cook evenly and achieve that delightful golden color.

Prepare the Mushrooms: Gently clean the mushrooms using a damp paper towel to remove any dirt. Carefully remove the stems and set aside the caps. Finely chop the mushroom stems and save them for the filling.

Sauté the Filling: In a skillet, heat the olive oil over medium heat. Add the finely chopped mushroom stems and minced garlic. Sauté for approximately 3-4 minutes, stirring occasionally, until the stems soften and the garlic becomes fragrant. Once cooked, remove from heat and allow the mixture to cool slightly.

Create the Cheese Filling: In a mixing bowl, combine the softened cream cheese, grated Parmesan cheese, shredded mozzarella cheese, chopped sundried tomatoes, sautéed mushroom stems, fresh basil, red pepper flakes (if using), and a pinch of salt and pepper. Mix well until all ingredients are fully incorporated and form a creamy filling.

Stuff the Mushroom Caps: Use a spoon or a piping bag to generously fill each mushroom cap with the cheese and sundried tomato mixture. If you enjoy a bit of texture, sprinkle a small amount of breadcrumbs on top of each stuffed mushroom.

Bake to Perfection: Arrange the stuffed mushrooms on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until the mushrooms are tender and the tops are beautifully golden brown.

Garnish and Serve: Remove the mushrooms from the oven and let them cool for a few minutes. Just before serving, garnish with finely chopped fresh parsley for a pop of color and freshness. Enjoy these delightful bites warm!
