Ingredients

1 large head of green cabbage

1 pound ground beef (or ground turkey for a leaner alternative)

1 cup uncooked rice (white or brown)

1 onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

1 can (8 oz) tomato sauce

1 cup beef or vegetable broth

2 tablespoons Worcestershire sauce

1 tablespoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

Prepare the Cabbage: Using a sharp knife, carefully remove the core from the head of cabbage. Fill a large pot with water, add a generous amount of salt, and bring it to a rapid boil. Once boiling, gently place the cabbage head into the pot and blanch it for 5-7 minutes, or until the outer leaves are tender and pliable. After blanching, remove the cabbage from the pot and allow it to cool in a colander.

Cook the Filling: Heat a splash of olive oil in a large skillet over medium heat. Add the finely chopped onion and minced garlic, sautéing until soft and fragrant, about 3-4 minutes. Next, add the ground beef (or turkey) and cook until browned, breaking it apart with a spatula, about 5-6 minutes. Drain any excess fat from the skillet.

Combine with Rice: Stir in the uncooked rice, undrained diced tomatoes, tomato sauce, broth, Worcestershire sauce, oregano, smoked paprika, and a pinch of salt and pepper. Bring the mixture to a simmer. Reduce the heat to low, cover the skillet, and let it cook for 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.

Assemble the Casserole: In a large baking dish, create the first layer by spreading a thin layer of the beef and rice mixture at the bottom. Carefully separate the cabbage leaves, choosing about 5-6 leaves, and layer them on top of the beef mixture. Spoon more of the beef mixture over the cabbage before repeating the layers, alternating between cabbage and the beef mixture until all ingredients are used. Finish with a final layer of cabbage on top.

Top it Off: Drizzle any remaining tomato sauce over the top layer of cabbage. Generously sprinkle the shredded mozzarella cheese over the sauce to create a delicious, cheesy crust.

Bake: Cover the baking dish tightly with aluminum foil and place it in the preheated oven. Bake for 30 minutes. Afterward, remove the foil and continue baking for an additional 15 minutes, or until the cheese on top is bubbly and a light golden brown.

Garnish and Serve: After baking, allow the casserole to rest for about 10 minutes before cutting into portions. Garnish the top with freshly chopped parsley for a vibrant touch. Serve warm and enjoy the delightful flavors!
