In a medium mixing bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Gently stir the ingredients together using a spoon. Set the mixture aside for 15-20 minutes to allow the strawberries to macerate, which enhances their sweetness and flavor.

    In a separate mixing bowl, use an electric mixer to whip the heavy cream on medium speed until it begins to thicken—this usually takes about 2-3 minutes. Gradually add the powdered sugar and vanilla extract while continuing to whip the cream. Stop whisking once soft peaks form; be cautious not to overwhip, as this could lead to a grainy texture.

      In a small bowl, thoroughly combine the graham cracker crumbs with the melted butter, ensuring that the crumbs are evenly coated and the mixture resembles wet sand.

        To assemble your icebox cups, place about 2 tablespoons of the graham cracker mixture at the bottom of each individual cup, pressing it down slightly for a firm base.
