For the sushi rice:

1 cup sushi rice

1 ¼ cups water

2 tablespoons rice vinegar

1 tablespoon sugar

½ teaspoon salt

For the spicy tuna mixture:

8 oz sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon Sriracha (adjust to taste)

1 teaspoon soy sauce

1 teaspoon sesame oil

1 green onion, finely chopped (both white and green parts)

For the stacked layers:

1 ripe avocado, thinly sliced

1 small cucumber, julienned

½ teaspoon sesame seeds (optional, for garnish)

Nori sheets, cut into small squares (for serving)

Instructions
 

Prepare the sushi rice:

    - Begin by rinsing the sushi rice under cold water until the water runs clear. This step is crucial as it removes excess starch, ensuring the rice becomes sticky and perfect for sushi.

      - In a medium saucepan, combine the rinsed rice and 1 ¼ cups of water. Bring to a boil over medium-high heat.

        - Once the water reaches a rolling boil, reduce the heat to low. Cover the saucepan with a tight-fitting lid and allow it to simmer for about 15 minutes, or until all the water is absorbed.

          - After cooking, remove the saucepan from heat and let it rest, still covered, for an additional 10 minutes to steam.

            - In a small bowl, whisk together the rice vinegar, sugar, and salt until fully dissolved. Drizzle this mixture over the cooked rice and gently fold it in with a spatula to combine. Allow the rice to cool to room temperature.

              Make the spicy tuna mixture:

                - In a mixing bowl, combine the diced tuna with mayonnaise, Sriracha, soy sauce, sesame oil, and finely chopped green onions. Gently stir until the tuna is evenly coated, being careful not to mash the fish.

                  Assemble the sushi stacks:

                    - Using a round mold or a clean glass with a diameter of about 2-3 inches, start by layering a portion of sushi rice at the bottom. Use the back of a spoon to press the rice down gently, compacting it evenly.

                      - Add a layer of the spicy tuna mixture on top of the rice, pressing it down lightly for a neat stack.

                        - Next, layer the sliced avocado over the spicy tuna, followed by the julienned cucumber.

                          - If your mold is tall enough, you can repeat the layers, ending with a layer of sushi rice at the top.

                            Plate the stacks:

                              - Carefully lift the mold off of the sushi stack. If it sticks, gently run a spatula or knife around the edges to help release it.

                                - Optionally, sprinkle sesame seeds on top for extra flavor and garnish. Serve with nori squares on the side for a fun wrapping element.

                                  Serve:
