1 lb (450g) chicken breast, thinly sliced

2 cups jasmine rice

1 cup chicken broth

2 tablespoons soy sauce

2 tablespoons fish sauce

2 tablespoons chili paste (adjust according to spice preference)

1 tablespoon brown sugar

3 cloves garlic, minced

1 inch fresh ginger, grated

1 red bell pepper, sliced into thin strips

1 cup snap peas, trimmed at the ends

1 tablespoon vegetable oil

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Sliced green onions (for garnish)

Crushed peanuts (optional, for garnish)

Instructions
 

Prepare the Rice: Start by rinsing the jasmine rice under cold running water until the water runs clear to remove excess starch. In a medium-sized pot, combine the rinsed rice and chicken broth. Bring the mixture to a rolling boil over high heat. Once boiling, immediately reduce the heat to low, cover with a lid, and simmer for about 18 minutes, or until the rice is fluffy and has absorbed all the broth. Afterward, remove from heat and let it sit, covered, for an additional 5 minutes to steam.

    Marinate the Chicken: In a mixing bowl, whisk together soy sauce, fish sauce, chili paste, brown sugar, minced garlic, and grated ginger until smooth.
