1 lb spicy Italian sausage (or your favorite spicy sausage)

1 cup uncooked long-grain white rice

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with their juices

1 medium onion, chopped

1 red bell pepper, chopped

2 cloves garlic, minced

2 cups chicken or vegetable broth

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon crushed red pepper flakes (adjust according to your spice preference)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

1 avocado, diced (optional, for serving)

Instructions
 

Brown the Sausage: In a large skillet, heat olive oil over medium heat. Add the spicy sausage, using a wooden spoon to break it apart as it cooks. Sauté until the sausage is browned and cooked through, approximately 5 to 7 minutes. Once ready, remove the sausage from the skillet and set it aside on a plate.

    Sauté Vegetables: In the same skillet, add the chopped onion and red bell pepper. Sauté these vegetables for about 4 to 5 minutes, stirring occasionally, until they are softened. Next, add the minced garlic and continue cooking for an additional 1 to 2 minutes until the garlic is fragrant.

      Incorporate Spices & Rice: Stir in the smoked paprika, cumin, and crushed red pepper flakes, allowing the spices to toast momentarily in the heat. Then, add the uncooked rice to the skillet, stirring to coat the rice evenly in the spice mixture for about 1 minute.

        Combine Ingredients: Return the browned sausage to the skillet and add the drained black beans and the diced tomatoes (with their juices). Pour in the chicken or vegetable broth and stir until all ingredients are well combined. Season with salt and pepper to taste.

          Cook the Rice: Increase the heat slightly until the mixture begins to simmer. Once simmering, cover the skillet with a lid and reduce the heat to low. Allow it to cook gently for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.

            Rest & Fluff: After the cooking time, remove the skillet from heat and let it rest, covered, for 5 additional minutes. This will help the flavors meld. Use a fork to fluff the rice and gently mix all the ingredients together.
