2 cups shredded cooked chicken (rotisserie chicken works wonderfully)

1 ripe mango, diced into bite-sized pieces

1 red bell pepper, thinly sliced into strips

1 avocado, sliced for creaminess

1 cup fresh spinach or peppery arugula

1/4 cup red onion, thinly sliced for a bit of crunch

1/4 cup fresh cilantro, chopped for flavor

1/4 cup mayonnaise (or Greek yogurt for a lighter alternative)

2 tablespoons sriracha sauce (adjust according to heat preference)

Juice of 1 fresh lime for zest

Salt and pepper to taste

4 large whole wheat or spinach tortillas for wrapping

Prepare the Sauce: In a small mixing bowl, combine the mayonnaise (or Greek yogurt) with the sriracha sauce and the juice of half the lime. Stir until smooth and well blended. Taste the sauce and season with salt and pepper according to your preference.

    Combine the Filling: In a spacious mixing bowl, add the shredded chicken, diced mango, sliced red bell pepper, sliced avocado, spinach (or arugula), red onion, and chopped cilantro. Drizzle the prepared sauce over the filling and gently toss all ingredients together until everything is nicely coated with the sauce.

      Assemble the Wraps: Take each tortilla and lay it flat on a clean, dry surface. Evenly distribute the chicken and mango mixture down the center of each tortilla, leaving about an inch of space on both sides for easy wrapping.

        Wrap it Up: Fold the sides of each tortilla over the filling to create an envelope. Then, starting from the bottom, carefully roll the tortilla upward, tucking in the sides as you go to create a tight and secure wrap.
