Ingredients

1 lb ground pork (or beef)

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup finely chopped green onions

2 cloves garlic, minced

2 tablespoons fresh ginger, grated

1 large egg, beaten

1 tablespoon soy sauce

2 tablespoons gochujang (Korean red chili paste)

1 tablespoon sesame oil

1 tablespoon brown sugar

1 teaspoon freshly ground black pepper

1/2 teaspoon salt

Sesame seeds (for garnish)

Additional chopped green onions (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C), ensuring it's fully heated before placing in the meatballs for even cooking.

Combine the Ingredients: In a large mixing bowl, add the ground pork (or beef), breadcrumbs, chopped green onions, minced garlic, grated ginger, beaten egg, soy sauce, gochujang, sesame oil, brown sugar, black pepper, and salt. Using your hands, mix the ingredients together until just combined; avoid overmixing to keep the meatballs tender.

Form the Meatballs: With your hands, scoop out portions of the mixture and roll them into golf ball-sized meatballs (about 1.5 inches in diameter). Arrange the meatballs on a baking sheet lined with parchment paper, ensuring they are spaced about an inch apart to allow even cooking.

Bake the Meatballs: Place the baking sheet in the preheated oven. Bake the meatballs for 20-25 minutes, or until they are cooked through and appear lightly browned on the outside.

Prepare the Glaze: While the meatballs are baking, prepare the glaze. In a small saucepan set over medium heat, combine 2 tablespoons of gochujang, 1 tablespoon of soy sauce, and 1 tablespoon of brown sugar. Stir the mixture until it is smooth and heated through—this should take a few minutes.

Coat the Meatballs with Glaze: After the meatballs are finished baking, remove them from the oven. While they are still hot, drizzle the prepared glaze over the meatballs and gently toss them to ensure each meatball is evenly coated with the spicy, sweet sauce.

Garnish and Serve: Transfer the glazed meatballs to a beautiful serving platter. For an appealing presentation, sprinkle sesame seeds and additional chopped green onions on top. These flavorful meatballs can be enjoyed hot, served alongside steamed rice or wrapped in fresh lettuce leaves for a satisfying meal.
