Ingredients

8 chicken drumsticks

3 tablespoons extra virgin olive oil

6 cloves of garlic, minced

2 teaspoons smoked paprika

1 teaspoon chili powder

1 teaspoon cayenne pepper (adjust according to your heat preference)

Zest and juice of 2 limes

1 tablespoon honey

Salt and freshly ground black pepper to taste

1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

1 red onion, cut into wedges

Fresh cilantro leaves, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Prepare a large baking tray by lining it with parchment paper for easy cleanup.

Prepare the Marinade: In a mixing bowl, combine the olive oil, minced garlic, smoked paprika, chili powder, cayenne pepper, lime zest, lime juice, honey, and a generous pinch of salt and pepper. Whisk the ingredients thoroughly until they are well incorporated and create a smooth marinade.

Marinate the Drumsticks: Add the chicken drumsticks to the bowl containing the marinade. Using your hands or tongs, toss the drumsticks until they are fully coated in the flavorful mixture. If you have time, let the drumsticks marinate for at least 30 minutes to an hour in the refrigerator to enhance the flavors.

Add the Vegetables: On your prepared baking tray, evenly spread out the red bell pepper strips, green bell pepper strips, and red onion wedges. This colorful vegetable base will add great flavor as they roast. Place the marinated drumsticks on top of the vegetables.

Bake: Carefully transfer the tray to the preheated oven. Bake for 35-40 minutes, or until the chicken drumsticks are golden brown, and their juices run clear (internal temperature should reach 165°F or 74°C). For an extra crispy finish, you can turn on the broiler for the last 5 minutes of cooking.

Serve: Once the drumsticks are cooked to perfection, remove the tray from the oven and allow it to rest for a few minutes. For a vibrant finish, sprinkle fresh cilantro leaves over the dish.

Enjoy: Enjoy your spicy garlic lime drumsticks alongside a serving of fluffy rice, nutty quinoa, or a refreshing green salad for a balanced and satisfying meal.
