1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1 small onion, finely diced

2 cloves garlic, minced

1-2 chipotle peppers in adobo sauce, finely chopped (adjust according to your spice preference)

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste

1 tbsp olive oil

4 large flour tortillas

1 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely diced onion. Sauté for about 3-4 minutes until the onion is softened and translucent. Add the minced garlic and sauté for an additional minute, or until fragrant.

Cook for 7-10 minutes, stirring occasionally, until the turkey is browned and fully cooked through, breaking it apart with a spatula as it cooks. Once browned, mix in the chopped chipotle peppers, ground cumin, smoked paprika, chili powder, and season with salt and pepper. Continue to cook for an additional 2-3 minutes, allowing the flavors to meld together. Remove from heat and let the mixture cool slightly.
