Ingredients

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

2 tablespoons olive oil

8 oz fettuccine pasta

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tablespoon butter

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional, for added heat)

Salt and freshly ground black pepper, to taste

Fresh parsley, finely chopped (for garnish)

Instructions

Season the Chicken: Generously rub the Cajun seasoning all over the chicken breasts, making sure they are evenly coated. Allow the seasoned chicken to sit for at least 15 minutes; this waiting period will help the flavors penetrate the meat.

Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, carefully place the seasoned chicken breasts in the skillet. Cook the chicken for approximately 6-7 minutes on each side, or until they are fully cooked through and develop a golden brown color. Remove the chicken from the skillet and set it aside to rest.

Cook the Pasta: While the chicken rests, bring a large pot of salted water to a rolling boil. Add the fettuccine pasta to the boiling water and cook according to the package instructions until al dente. Before draining the pasta, reserve 1 cup of the pasta cooking water. Then, drain the fettuccine and set aside.

Prepare the Sauce: In the same skillet that you cooked the chicken, reduce the heat to low and add the butter along with the minced garlic. Sauté for about 1 minute, stirring frequently, until the garlic is aromatic but not burned. Next, pour in the heavy cream and bring it to a gentle simmer, allowing the flavors to meld.

Incorporate Parmesan: Gradually stir in the grated Parmesan cheese until it melts and creates a creamy sauce. If the sauce seems too thick, gradually add the reserved pasta water until you achieve your desired creamy consistency. Season the sauce with salt, freshly ground black pepper, and, if desired, the red pepper flakes for an extra kick of heat.

Combine the Ingredients: Slice the rested chicken into bite-sized strips and add it to the Alfredo sauce. Gently toss in the drained fettuccine, mixing everything together to ensure that every piece is well-coated in the rich sauce.

Serve: Plate the Cajun chicken Alfredo with generous helpings. Garnish each plate with a sprinkle of freshly chopped parsley for a pop of color and flavor. Serve immediately to savor the delightful combination of spices and creaminess!
