1 cup green or brown lentils, thoroughly rinsed

1 tablespoon extra virgin olive oil

1 medium onion, finely diced

3 garlic cloves, minced

1-inch piece fresh ginger, grated

1 large carrot, diced

1 celery stalk, diced

1 bell pepper (any color), diced

1 teaspoon ground turmeric

1 teaspoon ground cumin

½ teaspoon smoked paprika

½ teaspoon ground coriander

4 cups vegetable broth or water

1 can (14 oz) coconut milk

Salt and black pepper, to taste

Juice of 1 fresh lemon

Fresh cilantro or parsley, finely chopped, for garnish

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Once hot, add the finely diced onion and cook for approximately 5 minutes, stirring occasionally, until the onion becomes translucent. Next, incorporate the minced garlic and grated ginger, cooking for an additional minute until fragrant.

    Add the Carrots and Celery: Introduce the diced carrot and celery to the pot. Sauté together for 3-4 minutes, stirring, until the vegetables are slightly softened.

      Incorporate the Bell Pepper: Add the diced bell pepper to the pot and sauté for 2-3 minutes until it begins to soften and mingle with the other vegetables.
