400g spaghetti

2 cups fresh basil leaves, tightly packed

1/2 cup finely grated Parmesan cheese

1/3 cup pine nuts, toasted for extra flavor

2 garlic cloves, minced

1/2 cup extra virgin olive oil

Salt, to taste

Freshly cracked black pepper, to taste

Optional: Cherry tomatoes, halved for garnish

Cook the Spaghetti: Fill a large pot with water, season generously with salt, and bring to a rolling boil. Add the spaghetti and cook according to the package instructions until it reaches an al dente texture. Before draining, reserve 1 cup of the pasta water. Drain the spaghetti and set it aside.

    Prepare the Pesto: While the spaghetti cooks, prepare the pesto. In a food processor, combine the fresh basil leaves, toasted pine nuts, minced garlic, and grated Parmesan cheese. Pulse the mixture until it is finely chopped but not pureed, maintaining some texture.

      Emulsify the Pesto: With the food processor running, gradually drizzle in the olive oil. Continue blending until the pesto achieves a smooth and creamy consistency. You may need to stop occasionally to scrape down the sides of the bowl to ensure everything is well combined.

        Adjust Seasoning: After blending, taste the pesto and season it with salt and freshly cracked black pepper to enhance the flavors. If the pesto is too thick for your liking, incorporate a tablespoon or two of the reserved pasta water until you achieve the desired consistency.
