Ingredients

1 lb carrots, peeled and cut into fry shapes

2 tablespoons olive oil

2 tablespoons pure maple syrup

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon cayenne pepper (adjust to your heat preference)

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). This high temperature is crucial for achieving crispiness in your carrot fries.

Prepare the Carrots: Begin with the carrots. After peeling them, cut each carrot into thin strips resembling fries, about 1/4 inch thick. Aim for uniform thickness to ensure they cook evenly.

Create the Glaze: In a large mixing bowl, combine the olive oil, maple syrup, smoked paprika, garlic powder, onion powder, cayenne pepper, and a pinch of salt and freshly cracked black pepper. Whisk the ingredients together until the mixture is well blended and smooth.

Coat the Carrots: Add your carrot fries to the glaze in the mixing bowl. Toss them gently but thoroughly until every fry is evenly coated in the smoky-sweet glazing mixture.

Arrange on a Baking Sheet: Prepare a baking sheet by lining it with parchment paper or lightly greasing it with olive oil. Spread the glazed carrot fries out in a single layer on the sheet. Ensure they are not crowded, as this will promote even roasting and crisping.

Bake: Place the baking sheet in the preheated oven. Bake for 20-25 minutes, making sure to flip the fries halfway through the baking time for even browning. They should come out tender on the inside with a caramelized exterior.

Garnish and Serve: Once the carrot fries are golden brown and perfectly roasted, remove them from the oven. For an extra touch of color and flavor, garnish with freshly chopped parsley if desired. Serve the fries warm for the best experience.
