Ingredients

4 ears of fresh corn, husked

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon chipotle powder

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

1/2 cup mayonnaise

1/2 cup sour cream

Juice of 1 lime

1/2 cup crumbled queso fresco

1/4 cup fresh cilantro leaves, chopped

1 ripe avocado, diced (for garnish)

Lime wedges, for serving

Instructions

Grill the Corn: Start by preheating your grill to medium-high heat. Brush each husked ear of corn generously with olive oil. Evenly sprinkle smoked paprika, chipotle powder, garlic powder, salt, and pepper over the corn. Place the seasoned corn directly onto the grill grates. Grill for approximately 10-12 minutes, turning them every few minutes until the corn is nicely charred and tender.

Prepare the Sauce: While the corn is grilling, prepare the creamy sauce. In a medium mixing bowl, whisk together the mayonnaise, sour cream, and fresh lime juice until the mixture is smooth and well combined. Taste the sauce and adjust seasoning with additional salt, pepper, or chipotle powder to your preference.

Cut the Corn Kernels: After grilling, carefully remove the corn from the grill and let it cool for a minute. Using a sharp knife, cut the kernels off the cob, letting them fall into a large mixing bowl.

Combine Ingredients: To the bowl of corn kernels, add the prepared sauce. Carefully fold in the crumbled queso fresco and chopped cilantro, mixing gently to ensure all ingredients are well incorporated without mashing the corn.

Serve: Spoon the smoky chipotle corn mixture into small cups or bowls for serving. Top each portion with diced avocado for a delightful creaminess. Garnish with additional cilantro and serve lime wedges on the side to squeeze over the top for an extra burst of flavor.

Enjoy: Serve these delicious street corn cups immediately while warm for the best experience.
