Ingredients

1 cup long-grain white rice

4 cups vegetable broth (or chicken broth)

1 medium onion, finely chopped

2 cups fresh mushrooms, sliced (cremini or button work well)

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried parsley

1/2 teaspoon freshly ground black pepper

1 teaspoon salt (adjust to taste)

1 cup heavy cream (or substitute with coconut cream for a dairy-free version)

1 cup grated Parmesan cheese (optional, adds extra creaminess)

Fresh parsley, chopped (for garnish)

Instructions

Prep the Rice: Begin by rinsing the long-grain white rice thoroughly under cold running water. This step helps to remove excess starch, which can lead to clumped rice. Once rinsed, set the rice aside to drain.

Assemble the Slow Cooker: In the base of your slow cooker, layer in the rinsed rice, followed by the finely chopped onion, sliced mushrooms, and minced garlic. Sprinkle in the dried thyme, dried parsley, freshly ground black pepper, and salt. Ensure the ingredients are evenly distributed.

Add the Broth: Carefully pour the vegetable or chicken broth over the layered ingredients in the slow cooker. Make sure that the rice is completely submerged in the broth for even cooking.

Cooking Time: Cover the slow cooker with its lid and set to cook on low heat for about 4 hours, or on high heat for 2 hours. If you can, give it a gentle stir halfway through the cooking time, but it’s not essential.

Incorporate Creaminess: Once the cooking time is up, check that the rice is tender and most of the liquid has been absorbed. Stir in the heavy cream and, if using, the grated Parmesan cheese. Mix thoroughly until everything is beautifully creamy and well-combined.

Final Adjustments: Before serving, taste the creamy mushroom rice and adjust the seasoning with more salt or pepper if desired. Let the dish sit for approximately 10 minutes, allowing it to thicken slightly and develop flavors.

Garnish and Serve: Dish out the creamy mushroom rice into serving bowls. Top with a sprinkle of fresh chopped parsley for a pop of color and freshness. Enjoy your delightful dish!
