1 teaspoon dried oregano

1 teaspoon chipotle powder

1 teaspoon salt

½ teaspoon black pepper

1 can (14.5 oz) diced tomatoes (with juices)

1 cup beef broth

2 tablespoons apple cider vinegar

1 tablespoon Worcestershire sauce

For Serving:

Corn or flour tortillas

Fresh cilantro, chopped

Crumbled Cotija cheese

Lime wedges

Slices of avocado

Pickled red onions (optional)

Instructions

Prepare the Beef: Begin by patting the beef chuck roast dry with paper towels. Season all sides generously with salt, black pepper, smoked paprika, cumin, dried oregano, and chipotle powder, ensuring an even coating for maximum flavor.

Sear the Meat: In a large skillet, heat the olive oil over medium-high heat. Once hot, sear the beef roast for approximately 4-5 minutes on each side, or until it develops a rich, brown crust. This step is essential as it enhances the overall depth of flavor in your pulled beef.

Sauté Aromatics: In the same skillet you used for the beef, add the finely chopped onion and minced garlic. Sauté these for 2-3 minutes, stirring frequently, until the onion becomes soft, translucent, and aromatic.

Combine Ingredients in the Slow Cooker: Transfer the seared beef into the slow cooker. Layer in the sautéed onion and garlic, along with the can of diced tomatoes (including their juices), beef broth, apple cider vinegar, and Worcestershire sauce. Ensure the beef is mostly submerged in the mixture to promote even cooking.

Slow Cook: Cover the slow cooker with its lid and set it to cook on low for 8-10 hours or on high for 4-6 hours. The goal is for the beef to become fork-tender, making it easy to shred apart.

Shred the Beef: After the cooking time is complete, carefully remove the beef from the slow cooker and place it onto a large cutting board. Using two forks, shred the beef into bite-sized pieces. Add the shredded beef back into the slow cooker, mixing it well to absorb the flavorful juices.

Heat the Tortillas: While the beef is soaking up the juices, warm the tortillas in a dry skillet over medium heat. Heat them for about 30 seconds on each side or until they’re pliable and ready to be filled.

Assemble Tacos: To assemble each taco, layer a generous portion of pulled beef onto the warm tortillas. Top with a sprinkle of chopped cilantro, crumbled Cotija cheese, fresh avocado slices, and a few pickled red onions if desired, creating an enticing and vibrant presentation. Serve with lime wedges on the side.

Enjoy: Invite your friends and family to join in the feast! Serve these deliciously smoky chipotle pulled beef tacos and relish in the delectable flavors of your culinary innovation!
