Skillet Garlic Shrimp with Zucchini Noodles

1 lb (450g) large shrimp, peeled and deveined

3 medium zucchinis, spiralized into noodles

4 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon red pepper flakes (adjust to taste)

Juice and zest of 1 lemon

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish

Optional: Grated Parmesan cheese for serving

Prepare the Zucchini Noodles: Use a spiralizer to create noodles from the zucchinis. If you don’t have a spiralizer, a vegetable peeler can be used to make thin strips. Set the zucchini noodles aside in a colander to drain excess moisture.

    Season the Shrimp: Place the peeled and deveined shrimp in a large mixing bowl. Season them with salt, pepper, and red pepper flakes, ensuring they are evenly coated for maximized flavor.

      Heat the Skillet: In a large skillet, heat the olive oil and butter over medium-high heat. Once the butter has melted and the mixture is bubbling, add the minced garlic. Sauté for approximately 30 seconds, or until fragrant—be cautious not to let the garlic burn!

        Cook the Shrimp: Immediately add the seasoned shrimp to the skillet. Cook for about 2-3 minutes on each side until the shrimp turn pink and opaque. Once cooked, transfer the shrimp to a plate and gently cover to keep warm.

          Sauté Zucchini Noodles: In the same skillet, add your spiralized zucchini noodles. Sauté them for 2-3 minutes, stirring frequently, until they become just tender but still retain a slight crunch.

            Combine Ingredients: Return the cooked shrimp to the skillet with the zucchini noodles. Pour in the lemon juice and add the lemon zest. Gently toss all ingredients together for 1-2 minutes to heat through and blend the flavors.

              Serve: Remove the skillet from heat once everything is well combined. Garnish the dish with freshly chopped parsley, and if desired, sprinkle with grated Parmesan cheese. Plate the dish and enjoy immediately!
