For the Shrimp:

1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon soy sauce

1 tablespoon fresh lime juice

Salt and black pepper, to taste

For the Blueberry Glaze:

1 cup fresh or frozen blueberries

¼ cup honey or pure maple syrup

2 tablespoons balsamic vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water (optional for thickening)

For Assembly:

1 head of butter lettuce or romaine, separated into leaves

1 red bell pepper, thinly sliced

1 cucumber, julienned

Fresh cilantro, for garnish

Sliced avocado (optional)

Instructions
 

Prepare the Blueberry Glaze: In a small saucepan, combine the blueberries, honey (or maple syrup), and balsamic vinegar. Heat over medium heat, allowing the mixture to come to a gentle simmer while stirring occasionally. Cook for about 5–7 minutes, or until the blueberries begin to break down into a saucy consistency. For a thicker glaze, stir in the cornstarch-water mixture and continue to cook for an additional 1–2 minutes until the sauce thickens. Season the glaze with salt and pepper to taste, then remove from heat and set aside.

    Marinate the Shrimp: In a large mixing bowl, add the peeled and deveined shrimp. Drizzle with olive oil and add minced garlic, grated ginger, soy sauce, lime juice, salt, and pepper. Toss the shrimp well to coat them evenly. Allow the shrimp to marinate at room temperature for about 10 minutes while you prepare the other ingredients.

      Cook the Shrimp: Preheat a skillet over medium-high heat. Once hot, arrange the marinated shrimp in a single layer in the skillet. Cook for 2–3 minutes on each side, or until the shrimp turn pink and opaque, indicating they are fully cooked. Remove the skillet from the heat.

        Assemble the Wraps: Take a leaf of butter lettuce or romaine and place it on a clean surface or plate. Layer with a few slices of red bell pepper and cucumber. Top with 2-3 cooked shrimp and drizzle generously with the blueberry glaze.

          Garnish: Finish each wrap by sprinkling with fresh cilantro and adding sliced avocado, if desired, for added creaminess and flavor.
