Shrimp Cucumber Cups

1 lb large shrimp, peeled and deveined

2 medium cucumbers

1 cup red bell pepper, diced

½ cup red onion, diced

½ cup fresh cilantro, finely chopped

1 ripe avocado, diced

2 tablespoons extra virgin olive oil

1 tablespoon fresh lime juice

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Lime wedges, for garnish

Prepare the Shrimp: In a medium saucepan, bring a pot of water to a rolling boil. Add the shrimp and cook for 2-3 minutes, or until the shrimp turn pink and opaque. Drain immediately and rinse under cold water to halt the cooking process. Once cooled, chop the shrimp into bite-sized pieces and set aside.

    Make the Filling: In a large mixing bowl, combine the chopped shrimp, diced red bell pepper, diced red onion, diced avocado, and finely chopped cilantro. Gently mix until evenly distributed.

      Prepare the Dressing: In a small bowl, whisk together the olive oil, fresh lime juice, garlic powder, smoked paprika, along with a pinch of salt and pepper. Pour this dressing over the shrimp mixture, gently tossing to ensure every ingredient is luxuriously coated.

        Prepare the Cucumbers: Slice the cucumbers into 1½-inch thick rounds. Using a small spoon or melon baller, carefully scoop out a portion of the center of each cucumber slice to form small cups without breaking the edges.
